White Chicken Chili

This has quickly become one of my new favorite meals.  Quick, easy, healthy, and the kids (usually) enjoy it, too.  That's pretty much all I ask for these days.  It's also great because you can stock all the ingredients in your pantry/freezer to have at the ready.  Long gone are the evenings of leisurely stirring risotto for forty minutes while sipping on a few glasses of wine.  Yesterday I put all the ingredients in the crock pot after lunch and dinner was ready to go at our early bird time of 5pm when we came in from playing a highly competitive game of outdoors Chutes and Ladders.  If you're wondering what that is, it's basically Colin directing me around the yard to most of the "chutes" and him winning the game.  The champion always seems to win ice cream. Turkey Chili

I can't believe I haven't share my Turkey Chili recipe with you.  It's one of my staple meals that I know will make a lot of delicious food, with even better leftovers.  The exact recipe changes based on my mood and what I have on hand, so it's always evolving.  That's one of the best things about chili, and I encourage you to make it your own.  You can also throw everything into the crock pot and cook it on low all day.  Turkey Chili Serves 6+ 1 pound ground turkey 1 Tablespoon olive oil 1 onion, chopped 1 red bell pepper, chopped 1 jalapeno, chopped 2 garlic cloves, chopped 1 Tablespoon ground cumin 1 Tablespoon chili powder 1 teaspoon coriander 1/4 teaspoon cayenne pepper kosher salt and pepper 4 chiplotes in adobo, chopped (adjust based on your spiciness preference - we like it hot!) 28 oz. can crushed tomatoes 14 oz. water 28 oz. can black beans, drained and rinsed 14 oz. can red beans, drained and rinsed 1 cup corn (no need to thaw if...

Crock Pot Vegetarian Chili

I love my crock pot.  It does all the things it claims to, and never fails in making a perfect dish.  From pulled pork or chicken, to beef stew, to mulled apple cider with rum.  It's all good.  This chili recipe takes about 15 minutes of prep time, and then you can ignore it for the rest of the day.  You can even do the prep the night before, put the whole thing in the fridge overnight, and cook it the next day.  As with many of my recipes, you can alter this any way you want by switching up the vegetables or beans to suit your tastes.  Crock Pot Vegetarian Chili 1 Tablespoon olive oil 1 onion, chopped 2 garlic cloves, chopped 1 bell pepper, chopped 1 jalapeno, chopped 2 Tablespoons ground cumin 2 Tablespoons chili powder 1 Teaspoon oregano 1/2 Teaspoon salt A few grinds black pepper 1 28 oz. can crushed tomatoes 2 14 oz. cans black beans, drained and rinsed 1 14 oz. can small red beans, drained and rinsed 1-2 cups water Optional...
