Buffalo Cauliflower Salad

This is a veggie salad, but spiced (trashed?) up with hot sauce and blue cheese.  It fills your buffalo chicken cravings without the potentially weird chicken pieces.  If I'm eating chicken and I get a piece of cartilage or something it ruins the whole experience from me and I pretty much throw the rest at Jon and then complain about being hungry. Coating the cauliflower in batter and baking gives them a slightly crispy exterior, which kind of negates the whole vegetable thing, but at least it's not deep fried. Buffalo Cauliflower from Skinnytaste 1 head cauliflower, cut into florets 1 cup water 1 cup flour 2 tsp. garlic powder 1/2-3/4 cup hot sauce Preheat oven to 450 degrees. Broccoli, Cauliflower and Potato Soup

This is one of those meals you make when you don't feel like cooking.  Easy, healthy, and made up of all pantry/freezer items.  You might even have everything on hand. The potatoes give this a creamy texture, without any cream.  Leaving half the broccoli and cauliflower as florets gives you something to chew on so it's not just a puree soup.  Add the bacon for a little extra smokiness and baconess.  Leave it out and you've got a vegan soup.  Broccoli, Cauliflower and Potato Soup Ingredients: Olive oil 1 medium onion, chopped 1 stalk celery, chopped 3 garlic cloves, chopped 1 large carrot, chopped 4 Yukon gold potatoes, or about a pound and a half of any potatoes, chopped 1 lb. frozen broccoli florets 1 lb. frozen cauliflower florets 1 teaspoon dried thyme 4-6 cups vegetable broth Hot sauce Salt and Pepper Crumbled bacon, for topping In a large soup pot, heat olive oil over medium. Pasta with Roasted Cauliflower and Chicken Sausage

This is one of the most requested dinners around here.  Cauliflower is kind of a tricky vegetable.  On it's own, I think it's kind of tasteless, but roasted with olive oil and garlic, it's good stuff.  Plus it's full of good things for you, so added bonus.  The recipe was originally from Cooking Light, but I've modified it a bit (mostly making it less light...).  It only takes about 20 minutes to pull together, which means it's great for a quick dinner, or if you are cooking at 10:30 in the morning because you didn't plan ahead.   Pasta with Roasted Cauliflower and Chicken Sausage adapted from Cooking Light Ingredients: 1 package (4 links) chicken sausage - I've used spicy jalapeno and chicken apple, both with success 3 cups   small cauliflower florets - I use the entire head of cauliflower 2 tablespoons   extra-virgin olive oil, divided 1/2 teaspoon   salt, divided 5  garlic cloves, sliced 4 cups   uncooked farfalle -...
